My best advice is to read the contents of them to see if anything in them piques your curiosity. Another strategy is to look to the workshop for builds you like and select a dlc that is common among those builds. In the end an avid Planet Zoo fan will ultimately suggest one purchases all the dlc. So add the ones you like to a wish list in steam and get them when they go on sale.
It might also be more helpful to ask players which dlc is the one used least...
I personally would recommend the Arctic pack, but please do your own research to pick which DLCs you want, preferences are different for everyone and it's best to do what you want rather than follow other's leads.
Personally i like the Conservation Pack, Australia and the Aquatic (in this case - not that much for the animals - but many workshop items need it).
I normally don't try to give instruction on how to build specific styles but help in discovering new things by showing completed builds of different things. Maybe the best kit to look at is the lonely river build kit and some of the completed buildings to get an idea how that method of theme creation works.
