How high can animals jump over fences?
I'm doing the 2nd tutorial and I just bought a tapir

The Zoopedia listed the boundary requirement at >1m so I made it 1.03 meters tall and it totally jumped over it, I can't find any other info related to how high they can jump

Pay attention of the terrain, too. If it is only a little bit higher on the one or other side of the fence (within the animal's jump distance), or if there are eg. rocks or any other object, this can easily make some centimeters. There are also three fence modes and only one of them keeps the fence always at the height in relation to the terrain.

It's important to learn to use the heat maps, in particular the traversable area for animals. That one is the most valuable for figuring out escape points. The other heat maps are valuable for other things as well so explore them all and learn ways to use them for managing your zoos.
Just click the little radar at the lower left then select from the tool bar that pops up at the top.
I once couldn't figure out how my snow leopards were escaping until one day I slightly moved a rock and it was magically fixed. It might be something like that.

100% THIS! I had sand cats escaping THROUGH A WALL for no reason. The heat map read the escape point though, so I put a rock there until the heat map no longer showed it.

There are, however, sometimes issues with using construction pieces to make a barrier where it DOESN'T read the escape point, but it will show you the animal can go through it. Rocks are your friend!
