I often suggest that players think of a back story to help guide them in a direction for creation. Also just look at the zoos from the career mode, a lot can be learned from those. Or you might subscribe to things from the workshop to place in your zoo, many contributors have full sets of items that make good themed zoos easy.
Remember that we are our own worst critic so don't let it bother you too much, just change things if it doesn't feel right. No zoo is ever completed but in a state of constant change.
As you play more you will find that you are more familiar with the items and techniques that make all those things you see others doing, so be patient and studious, you will get there.
