PZ takes itself seriously and puts a focus on conservation.
Lets Build a Zoo does not take itself at all seriously, and puts a focus on ridiculously crazy species cross breeding and DNA splicing.
Personally I would recommend PZ, but that's because I prefer my tycoon games to take themselves at least a little seriously and also because I prefer the more realistic graphics style to pixel art. That and it has more actual animals (unless you count all the crazy cross-breeds in Lets Build a Zoo).
PZ also has way, way more depth and freedom in the construction/decor department. Which is an aspect of the game that I really enjoy.
So really it comes down to asking yourself if you want a serious zoo tycoon game or a zany one.
Despite my own recommendation, I recognize that there are times when having some zany fun is also a good thing. Which is why I have both.
Anything like Sy-Fy original movies?
Not nearly as interesting as the movies. The way it works is you can breed two different species, and the result has the head of one on the body of another. So if you breed a cow and a chicken, for example, you get a cow's body with a chicken's head.
It is a pretty goofy game. LOL But, you do build a zoo pretty much the same as with PZ, just without all the construction/design elements that PZ has and in a far less realistic appearance (it is 2d pixel art, not fancy near-realistic 3d like PZ).
Like every game, there are restrictions, but you can build from the ground up in your own style and even the habitats can modelled as how you want it.
As Jaggid Edje, Planet Zoo also takes a very serious approach to the whole "zoo" theme. The animations on how animals go about is also awesome, personally I could also just build stuff that you would not relate to "managing a zoo" like building a entrence or shop.. (so much creative freedom)
I am a avarage builder I guess (not good, but not bad either) and I can pull stuff like this off from scratch in Planet Zoo.

Atm I am building an entence area focused in my new park and it is really taking a lot of hours. I am playing in franchise, where you have "money" involved and actually need to keep a balance and just can´t build freely until you earn cash.
(This is merely the start entrence of the zoo)

But even for those that don´t want all the creativity, there are plenty of presets and you can download other users creations (that have been shared) on the workshop as well.
There are many other modes in Planet Zoo as well, so if you like challange mode or pure management/simulation more, you can do that as well (albeit if you ask me, the creativity, is the strongest point of this game)
Lets build a zoo, is a more classical (retro) approach as far as I know and it does not have the complexity of this game (in terms of building, details, etc)
I don´t know how well the management/simulation are in that game however, but well.
One last note (sorry for wall of text) take into consideration your computers specs. Can you run Planet Zoo? (look at the shop page to find out)
