Yes, it does. But going through rather than past gets them closer to the animals so makes it more likely they will get a really good view of the animals. Just like with pedestrian viewing of habitats, visitors on rides get "thoughts" on how good their view is and if it's a good view, it makes them happier.
All of them can be used for both viewing and for transport. In fact, if you build them such that the ride does both, visitors like the ride a lot more and you can make more money from it.
The game has come a long way since release and you can make really decent money from transport rides now (whereas back a year+ ago, it was a LOT harder to make a ride profitable, at least for me it was).
The most important thing for the ride is to make it attractive though, which means having scenery along the route. (Natural foliage and rocks counts as scenery).
Yes, if you lay the track such that it passes near enough to habitats for the animals to be seen the visitors riding it will view animals while riding. And they will be quite happy about it assuming you have it passing close enough to get a 'good' view.
Where's the fun in that?
The poor visitors were stuck so long on the ride they should have wasted away.
It did not stop the Giraffes though. I also excavated a ditch under the raised ride. It was my biggest "african" savanna style habitat so the raising and the digging took ages.... then I had to build animal bridges so the animals could get over the track because I realised they were stranded....
After that I built raised railway rides that criss crossed the habitats up high. That worked so much better.
