Controlling guests. Limiting the number of guests can help to reduce the lag in one's zoo. Also controlling how they move through the zoo. Traffic jambs of guests create a huge hit on frame rate and lag as each frame they are recalculating a new route when they get blocked by another guest. So be aware when planning paths and habitats to reduce crowds as much as possible.
Controlling animals. Animals have the affect on frame rate and lag so think about the count of animals and any places they might get stuck or blocked.
Settings. For most players there few settings that will affect performance much. The reflection options and shadows options are the two that make the most impact. Of course the resolution one plays at can affect performance as well but it's still better to play at your monitor's native resolution.
