I recommend contacting support for this.
In the mean time... First thing to do in your case is check for an autosave of the zoo. It would also be wise to verify game files through steam library. It's rare but there is an issue where some save games simply get corrupted in the save and we do not understand why it happens.

Worked on 3 of my zoos. Some still have the souvenir shop in them so just delete them before you save and close out again.
Your animals will still be there, at least in franchise, since those are likely on PZ server or something, but any structures you built since your latest save won't be.
