I tried that and while they all left via that gate, everyone started entering through it as well causing massive blockages between the guests flowing in different directions.
There is a way to make an exit only gate at the far end of your zoo but it involves setting up a guest trap and is a bit of work. If I read your request correctly, you are just looking for an entry gate and then an exit gate that guests will use and it will not spawn guests. This is easy to set up. Have your path set up where guests must pass by a disabled spawner (you also have to have the gate entrance) before they reach the entrance. Disabled spawners prevent guests from spawning but zoo guests can still use it to depart the zoo. Since guests leave by the closest spawner, they will use your exit and not your entrance to leave the zoo.
I have not noticed guests leave when there is no spawner tile even if there are still ticket gates there.
So I have my normal entrance plaza with entry gates and a dozen spawn points scattered at least 10 tiles away. then to the side of my entrance plaza I created an exit path which only leads to my exit only spawn point. My exit spawn point is only 3 tiles away from the plaza to the side. Guests will always default to that exit spawn point since it is the closest one.
Hope that makes sense. Works great for me.
p.s. Just one quirk to my exit hack. Guests will initially return to the entry gate they came in through. but once they get there, they seem to evaluate where the closest spawn point is and will turn around and go back into the zoo and head over to the closest exit spawn point.
