Mascots idea

An idea I had is they could add mascots (basically walking ads) gulpee could have a dinosaur mascot and street fox a fox, the list goes on.

You mean the same as Planet Coaster. I would love to have them in Planet Zoo..... do actual zoos have them?

Maybe a deadly beauty or 2. Specifically a Red Kneed Tarantula.

An Alligator outfit would be fun, Panda, Ostrich for real animal. Street Fox, Monsieur Frites, Chief Beef, Missy Good, Cosmic Cow outfits for advertising the shop brands.

Which Cat would be best, maybe a Lion?

That's been wanted for sometime now. I think they might have planned the educator to use that function in the zoo rather than mascots. But it would be fun to have some mascot character that would roam around the zoo. Even one that had a random outfit rather than having a bunch of options could be okay, but I would still want to be able to choose one for my zoo.

They could walk around with a collection bucket and the guests could recieve a badge or a balloon with a conservation logo on it

Interesting concept. If we could be certain it wouldn't make lesser machines unable to run the game I would love to this be a new addition to the game! The balloon isn't an issue as it already exists. Just adding the animation sequences and ai for another character might be a bit more than one would think though.
