I was also quite surprised there were no Koalas and Alligators. But lets see what the developers got for us. (after fixing the game's crashes *cough* )
tbh extinct animals would make the game not feel right. Zoo tycoon made it work I think for the simplicity of the game, but was pushing it with ZT2. PZ has a lot more to offer than ZT did in terms of how you build and the details of the animals. Seeing a Dodo next to a Bengal Tiger just wouldn't feel right here. So for dinosaurs, I'd say stick with JWE. If they really wanted to give it the "ZT feel" and make it feel more like a dinosaur zoo rather than a park (like JWE), maybe they could release a separate game with all sorts of extinct animals and not just those found in the Jurassic Park franchise?
Now, aquatic life would be very interesting, but I'm skeptical about it for the same reason as the dinosaurs... depending on what features were added in. Animals like sea lions, otters, and maybe small aquarium exhibits with certain fish species would be okay... Or the ability to add fish to water areas with things like crocs and hippos. But whales, dolphins, and show animals might give it a wrong feel. So, I suggest an entirely separate game release with an aquatic life park rather than an expansion for PZ (calling it Planet Ocean or something).
My hope is that they continue to add more animals in future expansions (which they will, sadly for my wallet). For instance, we could get an endangered animal pack, carnivore pack, big cats pack, primate pack, North America, or a desert pack with more themes and animals. I would really like to have more birds added with maybe an aviary build set. Also, some more uncommon animals added such as a fox, alligators, beavers, penguins, bobcats,...
Ultimately, separate games for what you're saying would be best.
That would be a YES from me for the aviary!! Planet Zoo has already broken boundaries by adding the reptile enclosures (it's something no other "zoo game" has had in the past) and I'm sure they'll break plenty more - like aviaries; especially because it was recently added to JWE.
