The animal appeal rating seems directly tied to the star rating. Noticing those and comparing to same age animals points to animals that will star up the quickest. But one must be cautious with that approach as animals in the trade center will gain stars while in limbo! Also note that juvenile appeal will reset when an animal matures making those numbers useless.
@Heichou, I honestly rarely pay attention to star ratings of animals except for when we have these challenges so really don't have a feel for which animals are "best" for it, though there are as many opinions as there are players on it from what I've seen in the past.
I tend to get the most when doing this type of challenge from whichever animals I had with good starting genetics in the first place. Felines, Ursines and Canines are the the ones I notice most often getting to 5-stars, but I've got 4-5 star animals of pretty much every species in my various zoos.
Personally, I had just started a temperate zoo a few days ago anyway and will have one habitat for every animal on the list by the time the challenge starts. I'll have to keep track of what I release so I can walk away from the challenge with a better idea of what the real answer is.
BTW, food quality matters in terms of how quickly star rating goes up, so don't skimp on feeding during the challenge.
Bengal Tiger, Clouded Leopard and Cougar might be more expensive, but you get very good breeders on the market and they have multiple offspring with fast star raise.
Eurasian Lynx, European Badger and European Fallow Deer are also fast breeding and with the right start in genetics, they do get four stars relatively quickly. They are quite cheap in upkeep.
Greater Flamingo, Indian Peafowl, Japanese Macaque, Llama, Moose, North American Beaver and Pronghorn Antelope are very cheap to get, easy to keep but take a while to get the needes star rank. They are also some of my starter animals for every zoo, so don't be too worried about the costs.
Star Rating is a factor of the animal's overall well being and increases over time based on how well you look after an animal and how long it has been in your zoo. Genetics and appeal are a factor in this, but welfare and time-in-zoo also are.
To the question about colors: My albino Red Kangaroo are definitely faster raising in stars. They have the same genetics and age, as their normal colored siblings, but a higher star rank.
