How about a tunnel zoo in a mountain?
I'll let you finish that story.
If you want a challenge - polar zoo, only (or mostly) tropical animals. I did that myself to train myself to build. The buildings are mostly !, but it did the job of teaching me how to build and the aurora are just the perfect backdrop for everything.
And failing all that, just start a zoo and do what comes to you. You don't always need a plan, you don't need to make something special, just have fun with it.
I know my sandbox zoo (the main, nonthemed one) has a good habitat like that.
It was just fun to run a small tour truck through the lions.

Since it is possible now to add custome made habitat information screens and videos I came up with building educational paths around the habitats. At the moment I am working on a path where the visitors can experiance the prefered food of sunbears. So i created a panels which says 'follow the steps of the sunbear' and 'Can you spot his favorit food items?' next to a graphic which shows termites, fruits, small animals. In the next step I prepared spots including a termite hill, fruits and stuff hidden behind path bends and bushes for the guests to explore. In my mind children can get cards to mark all spots so they can have some kind of zoo scavanger hunt.
