Does your system meet minimum specs to run?
Do you have other programs/apps running when you try to play?
Is your system overclocked? Try reducing that.
If you were able to play before but can't anymore. Try deleting the game's config files search your computer for ( AppData\Local\Frontier Developments\Planet Coaster\Config_Local )
They will be rewritten at next start.

To your questions: Due to the fact that Planet Zoo used to run perfectly fine, it's safe to say that the system does meet the minimum specs. I deleted and reinstalled the game (several times...), I chose a different hard disk, I close every other program when trying to play and I just now deleted the conifg_local as you suggested and none of it worked :( I'm getting really frustrated here...
Also if you have planet coaster you might try verifying that too. Thinking the two might have some issues in their file conventions.
