One vet in the beginning, then add 1-2 later on as needed. I never hire more than 3. One is enough for checking on all the animals in your zoo, in my experience. Never had any trouble. The rest can do research (each needs a separate small research lab). I don't make work zones for them.
One mech in the beginning but get another as soon as you can afford him because one will be doing research and another repairing your barriers and utilities. One small workshop per researching mechanic. Start researching barriers, utilities (for the solar panel) and staff facilities (for the large keeper hut and large staff room) first. Ideally, one mech for 2-3 habitats (work zone -- Mech + 2 habitats + staff room), and one mech for all your utilities ( work zone - entrance + electrical + water + toilets + ATMs + staff room). If you assigned a work zone but missed, say, a toilet, no one would run to fix a broken down toilet even if you request a mechanic, unless you have someone without a work zone.
One caretaker will take care of your whole zoo as long as you don't see the overflowing bins. Hire more as needed. Make sure to place bins everywhere and have wide paths (as few as possible). Training is important.
Security guard. Don't hire them right away. Later on -- 1-3 depending on the size of your zoo. Place cameras, especially in the shopping areas, they help a lot.
When you have a few busy shops, hire one-two extra vendors.
P.S. Very important to set Mechanic's schedule for each habitat and utility to "every 3 months."
My 1 keeper can handle 3 Habitats easily IF short path to each Hab entry, usually do a Y.
As soon as possible I train everybody up 1 star. Then I will usually add another Vet and 2 more Mechs for research. Keep 1 Mech free from research at all times for repairs. I train up Vets, Keepers, Mechs to 3 stars once I am comfortable with income.
I never start with big animals, its usually Nile Monitors, Warthogs, Ostriches, and then some other mid level animals. I'll toss in a couple of exhibits, I like the black scorpions because long life, lots of offspring and I just vendor them for cash, same with monitors. Both of those litters are usually good for about $10K.
One other thing I will mention is that if a vet or mechanic is doing research they will not do routine visits of habitats or facilities.
Keepers MUST have a dedicated staff room. They can share with a vet early. You absolutely will run into issues if you share a staff room/rooms with vendors and other lower wage workers. It also helps you if you get them trained to 3 stars as fast as possible. Even 1 per 2 habs is much les costly and with all of the money loss complaints, its usually high labor/food costs doing it.
