yeah same happens with Aardvarks. They might be "shy" then they get stressed. Have you built a hard shelter for them to hide in when they're stressed? that helps

check the zoopedia, there is a "relationship with humans" section, that dictates how they will handle human interaction ( glass, walkthroughs, proximity, noise etc ). peacocks makes GREAT walkin exhibits, but aardvarks make terrible ones. Just because an animal is safe for the guests to walk in, doesn't mean the guests are safe for the animal :P

It helps if you don't make the animals have to cross the path, make the path go around the edge of the habitat and you should be fine.

Do they have somewhere to hide? Most of the animals can get stressed if they can't go hide from the guests, whether that's behind a clump of trees or a wall.
Though you might want to check if there's any other reasons they're stressed - if the enclosure is too small, there's too many of them or there's constant fighting for dominance they'll also get stressed out.

Make sure they some kind of hidden space that they can run away too with enrichment, hard shelter, bedding and toys.

Give them places to hide. For some of the animals like chinese pangolins there is really nice ground cover plant coverage that they can travel through which helps, for others use hard cover, or other natural barriers (like large rocks, etc.) to give them places in the habitat for hiding. Even large trees work if you use enough of them.

Anything that breaks visitor line of sight works to relieve the stress. It's not just about the visitors being noisy, the number of actual "eyeballs" on the animal in question is a large part of the stress, so having breaks like tree trunks will reduce the number of eyeballs that can be on them at one time.

My pronghorns were always stressed out, too. I used to have a ton of goldenrod around, but then I made them a mostly-enclosed rock shelter and installed one-way glass at viewing points at ground level. Now they're okay. I concur with the need for a solid hiding place, not just an overhang kind of shelter.

I've also experienced animals becoming stressed when a viewing platform crosses over the habitat perimeter. Even confident species, such as Grizzly Bears. They had a dug out enclosure with several trees, rocks and multiple caves. The platform was well above their area and only hung over it slightly. If they were out when people were viewing, they'd all get stressed. When they returned to a cave, they were fine, but just another string of annoying alerts that I wouldn't expect with a "confident" animal.

Of course, that was in my first Franchise zoo that I logged 120 hours working on that it no longer playable due to the last major update.

Thanks I have always wondered if those made a difference or if they were simply cosmetic.

About the Ambience speakers.. What kind of track would be good for the different animals that are shy? Or like Lemurs? My Aadvarks seems to like "Rainforest" ^^
