Animals dying and breeding so fast

I feel like animals die and breed really fast, I don't have time to do anything because when I unpause my game the animals breed like rabbits and I have to manage dozens of babies and sell animals instead of managing the zoo itself. If I prevent them from breeding they die and I run out of animals, I think there should be a limit which allows each species to breed x times per individual so they become infertile

i'd suggest making sure you only have one male and one female not on contraception. some animals are fertile till death but some have an age limit, they list the details of each animal on the zoopedia tab. i think they said they're trying to balance the breeding though so that it's more of a challenge so hopefully that will help

As spacecatt mentioned, contraceptives are good. Also note certain species breed like rabbits, others breed slowly. Species that breed like crazy due to mutiple babies per litter and fast gestation periods are common warthog, african wild dog, timber wolves, west african lions. Some slower breeders are Indian elephants and rhinos, bengal tigers, grizzly and black bears. The predators easier to manage b/c you will only ever have one female and one male, once kids come of age you are either shipping off the adults or the kids. Elephants gestation period is like 2 years and only get one calf from it. Rhinos are the slowest I've experienced as they have pretty long gestation period, and like predators can only have two adults in the group so if its a female baby you'll be looking at getting rid of the mom or newborn and vice versa if its male.
