You get 300+ ping when connected to China servers are due to several reasons. The common ones are usually poor server quality, poor connection between you and the server (because of server service providers), your internet service provider is bad at maintaining good connections when you are connecting to some overseas servers (unlikely for your case), etc.
You may also get 300 ping because the connection is not directly made. The route may go to different locations before reaching the server, which in turn increases the ping too.
All you can do is to play in different servers.
Idk why i cant even find a decent server with less than 200 ping on this game. Games with much smaller comunities have better servers run not by the game but by the players themselves (remember that european server i talked about?).

Or is this high ping something that happens to everyone in the game and is common with most servers? I really want to enjoy the game but 300 ping on every server is litterally unplayable.
Like I said, probably not your problem. The quality of the server and the connections between you and the server play critical roles. You can't do anything about them sadly since it's not your problem. All you can do is to join other servers. Australia servers have acceptable ping for me so why not give it a try?
AU Pantheon, Kitchen Island and Official servers are decent. Always full of people during peak hours.
