If you have low level units, but facing enemies much higher than you, can you give more info on what your playthrough was like so far to how you go to that point?
Off the top of my head, the only reason I can think of as to why you'd be underleveled would be if you were constantly switching out a ton of heroes each battle. If you stick to "a smaller core of heroes" (loose number, around 10-12) you should probably be fine.
However, to avoid "Grinding" per se, have you looked for secrets and treasures on the places you've been before? That's a good way of catching-up. Similarly, catching up is simpler because more EXP is awarded when a lower-level unit does something to a higher-level unit (both help or harm).

Well, again, depending on number of heroes, you may want to focus on a core group (again, around 10-12 to begin with, at least) to ensure that everyone "is good enough to fight what's needed".
For the heroes themselves, trying out the classes is good, but also "having a solid base of skills learned / a general concept for each hero" helps a lot. Examples:
Here's a couple casters I have (both healing and damage)
Here's a couple "melee hit em hard AND take a lot of punishment heroes" (pure tanks don't exist in this game, any tanky hero NEEDS to be able to pull their weight in some sort of way, whether via damage or supporting)
Here's a couple speedy heroes and/or ranged physical DPS heroes
Etc, you get the idea.
So, instead of "I want to have one of every class", try to come up with team compositions which help you thrive in the game, and have each hero try to keep to an archetype for maximum effectiveness. Note that yes, once you get the basics down, "experimenting" with fun builds is great, as is sometimes using certain hybrid-scaling classes.
