Not sure why you're experiencing issues.
Edit:
After thinking about it for a little bit, perhaps this could help: Have you tried using [Life Font] on Anadine? Not only will this help her stay alive quite easily, but will fuel those self-damaging moves from the Demon Knight class.
It definitely gets better as you pick up Cleave / Corrupted Blade but Enraged Blow is a good bread and butter move and Demonic Might should not be underestimated. Also because the moves hurt you, attacking the enemy from the side and back is something you should focus on (the more damage you do , the less the cost is proportionally for each attack)
And yeah you need to spend a few levels in it because one of it's strength is it's high HP and ATK growth.
Try and keep some healing support handy though, I try and keep a Peddler with Riftwalkers and Throwing/Multi Gloves around.
But, yes, a high basic attack does help. But if you've mainly taken her from Mercenary to Knight, that shouldn't be a problem, really. Just give her a chance to learn a few Demon Knight moves, and keep Life Font on her at all times - she'll soon turn into a deadly powerhouse!
Add in her powerful selfbuff(Demonic Might) and the ability to remove buffs on enemies(Cleansing Blade) and she is able to deal with most situations, with a little overwatch from the rest of your party.
If need be, give her a few levels as an Assassin or Gadgeteer. It helps even her stats out a little(in particular RES and speed), without neglecting health or Attack too much.
1 level in Assassin = 2.2 levels in Demon Knight in terms of speed gain, while you only need 1.4 level of Assassin to equal 1 level of DK in terms of Attack gain.
Or said in another way. 3 levels of DK gives you 18 ATK and 2 SPD. 2 Levels of KD+1 lvl of Assassin gives you 16.25 ATK and 2.8 SPD. Scale to 30 levels(the above x10) and we get 180 ATK and 20 SPD gain vs 162 ATK and 28 SPD gain.
The first version will deal roughly 11% more damage, but the other will get it's turn about 40% more often. It will also empower Haste more, due to a bigger base value.
Or just compensate with the rest of the party. She can focus on 1 shots(going for as much attack as possible, ie pure DK) and then have others do their thing, as well as giving her the occasional heal if need be.
At some point I had a reaver templar with razor wind passive and boy, those holy blade with 4 range are a much convenient finisher. Could imagine this working well with Demon Knight skills as well.
Personally not a fan of life font. It quickly becomes negligible as your health pool becomes bigger. Also the skills takes a fraction of your current HP, not the max. So the lower your life already is, the lower the HP cost. Critical Rebirth works well then, or a phoenix ring. You can go ham with a free card out of tomb.
Duellist has a passive leeching life. Could use that with cleave. Or dual wield the craftable blood axes that leech life already. So many possibilities is why this game is so great.
