Unlike other games, the main character Garrett doesn't try to be cool, he is trying to steal and stay away from action as much as possible. The story just sucks you in, and before you realise what's happening you will love this game and still play it 20 years later.
BTW, Thief 3 is an amazing game with memorable levels, such as the infamous Cradle level, and it is full of intrigue and unexpected mythology. It is also insanely immersive, especially after disabling certain hud options with the tweaks found online
I am just playing through thief 3 and its not bad. NOt on the same level as first 2, but it has a lot of good content as well.
User created content for T2 is on an absolutely stellar level. Here, I'll just leave my T2 fan mission screenshot gallery here, go see for yourself:

I'd say technical is shadow resolution, shadow smoothing, usage of bump mapping that crap. This is just a simple fact, the character isn't moving in a way, you'd expect him to and that breaks the immersion.
Don't listen to the T3 haters, all they do is give superficial excuses. Now, NuThief... that is BAD.
