I did not back Bloodstained: Ritual of the Night on Kickstarter myself, but I do agree that the physical PC copy should have been made and sent to you guys. I understand your frustration and am on your side. If I recall correctly, in another discussion thread I said the physical copy could have consisted of just the base game and that the extra content could have been put out as downloadable content later. It is something that had been done with Elder Scrolls IV: Oblivion's DLC and two expansion packs, Knights of the Nine and the Shivering Isles. And it could have been done with Bloodstained: Ritual of the Night as well.
But the developers and publishers did not follow that example, choosing instead to wait until each of the side modes and other extra content are finished and added to the game so all of it could be packaged into the physical disc. It is an unnecessary postponement of the pledge to create physical copies that, at this point, may wind up going unfulfilled.
There are already physical console ports, so it should not be too hard creating a physical PC port, especially as it is already available as a digital download. But the fact consoles do have these ports may be seen as a reason why a physical disc for the PC may not be made since they are already available and funding may want to be saved for other projects. The physical console discs may not be the same as the PC's physical disc, though they might be used as alternatives if the latter gets canceled.
That said, I do not think the developers and publishers will try to say they kept their word by having made the physical console ports. It would twist their promise into a statement that could be made to avoid taking responsibility. I believe they would issue an apology and probably provide some sort of refund or other form of compensation for not being able to live up to that promise. Having seen how they delayed this game to improve it after receiving criticism from the community before its release, I believe they are aware of this predicament and are doing their best to try and fulfill their end of the promise. The process of reaching that point, if they ever get there, has certainly been rather slow and rough, but I will give them the benefit of the doubt since they worked hard on the base game and made Bloodless Mode the best side mode in it. And they have been open with the community in the past on why the game was delayed.
I am hopeful that the physical disc for the PC will be made for you guys and am on your side as well as in agreement with you. But at the same time I need to be fair towards the developers, both because of circumstances beyond their control and because I enjoyed this game a lot. They truly achieved their goal of making it a successful spiritual successor to Castlevania. However, I also am looking at the situation as realistically as I can since those uncontrollable circumstance may affect their ability to fulfill their promise. While I am sure a lot of you will be happy and relieved if and when it is finally released, I do think there will also be a reaction of finality. A blunt "it's about time" response, if you will, that may overtake those feelings of happiness and relief. But not erase them, in full or in part.
