It's a scripted fight. You have to let it do two of its attacks and do enough damage to it before it can grab you... if it grabs you at all.
The shard drops rarely from the big, horned, portal cat monsters in the cathedral, so getting it is just a matter of grinding.
As for the dragons grabbing you, escaping that is just a matter of button mashing as I understand it, like getting petrified.
It's on the first floor of the towers after you parkour over the gears on the top in a chest.
It's incredibly overpowered for this early into the game and will destroy bosses without you ever needing to get close.
If you wanted to do a big stack of food however that's entirely doable just find which recipe(s) gives the most hp/mp and craft it. If you have more money than materials buy it from Dominque once you have crafted it once.
Get the Silver Bromide from the chest at the bottom of the tower where you fought the dragons, talk to Dominique to get a photograph, then talk to O.D. to get the Passplate. Then you can ride the train and unlock more of the map.
I just ran behind it and stayed behind it while pummeling it with attacks. I took zero damage and eventually brought it down.
I'm surprised that still works. I have had that happen to me once, it's hilarious to see how its body looks because part of it is cut off, if you noticed. But it definitely makes the fight extremely easy, and funny.
