Finished the game in 6 hours. 50% explored only.
The game ends after you beat that person? thats it...?

well you still have 40% to find, Aria of sorow had multiple endings as well so who knows if you have seen everything.

Same here. Wondering how to get underwater because Im guessing thats where most of the percentage is. Beating the game didn't unlock nightmare or hard either...

I haven't beaten the game yet, but Igavanias always have multiple endings. I'd say it's likely you got the "bad" ending and you need to do something specific in that final battle to unlock the true ending.
This game, like Castlevania games, has multiple endings. I got the bad ending to see what it was. I imagine you got it as well. Did your character have a talk about doing what had to be done?

IGA always loved the bad ending thing, you're definately missing something major to unlock the rest of the game. Keep going, the true ending is in sight!

There may be a shard that you are missing. This is mostly an exploration game and the true ending may be relatively well hidden.

I beat that one dude and then 'GAME OVER', brought me back to the Title Screen.

If you kill Gebel early, you just get a bad ending, hence the Game Over screen. There's MORE to the game that you guys gotta do. Just like Symphony of the Night after you KILLED Richter, you get a bad ending and the game just ends. Short. There's way more than the game leads on. You just gotta keep exploring until something new pops up for you to do.

if this is anything like, say, Order of Ecclesia, you have to complete all the side challenges/quests in order to get the true ending.

Oh god, I hope not..I'd rather it just be like SotN. Just go get certain things and fight more bosses along the way, reveal more story through exploration and then go fight the real true boss. Which we know exists. So...

anyway, OP, the point is: igavania is about multiple endings, depending on what you do in the game.

Kill the Blood Lady Vampire, and drain the Blood from the fountain, then in the water levels find a jellyfish that gives the power to swim, explore the water level to get to the undeground desert and eventually you'll find the power to walk under water
