The Problem is, that they inevitably influence the wood pipeline since they are competing for the same trees. The same trees that are limited by how many territories you can afford, by where the boars spawn, by where you want to develop your village and other industries.
Them cutting their own wood forces players to place them somewhere far away from the lumber camps and pray the Charcoal Burners or Woodcutters never run out of trees on their respective zones.
If the Charcoal Burners do run out of trees in their zone, suddenly they are walking across the map just to cut a tree, and your charcoal production basically stops.
And even if tree availability does not cause any problems, to avoid bottlenecks you still want to have all charcoal dependant production sites at least semi-close to the charcoal huts (or the warehouse where the charcoal arrives, which can't be too far away from them either).
Now the placement of a whole industry is affected by Charcoal Huts being picky with how they want their trees cut.
Because just as you say, they could basically use any chunks of wood, but the game doesn't allow that.
You should be able to tick on/off two options;
Cut trees down
Use Wood from Storage.
Ticking both off is basically putting the building on pause, but this way you can choose for both ways.
Yeah, making it optional sounds like an acceptable solution.
Why not allow them to do both, whatever is closer so to speak? There are many more friendly ways to approach this issue! Since I am re-playing on mod launch day, perhaps a modder will fix this irksome issue. If I find one, I will come and post it here :)
