There is a difference between a product that is in stock and one that is actually available. If the good is already in the market or has already been reserved by a market worker then it is no longer available.
To work around this problem you can open the resource list and press the stockpile button next to the resource. This will prohibit the use of the resource and you can be sure that it is available for you to use.
Of course you have to deactivate it as soon as you have unlocked the trade or your people will starve.
If the trade does not work then make sure that the slot of the storehouse/ granary is assigned and accessible. Especially the granary needs more space than expected (this will be fixed in the preview).
If you have bought a lot of honey in the past, the seller may not have any more in stock and you will have to wait until he has produced more.
