When or How do I acquire monastics?

I have a monastery built, with both monk and nun places to live. I have a scriptorium and an herb garden. Everything is physically built. An Abbess came awhile ago, and said she was interested.
So far, no abbess, no monks, no nuns. Which, if I understand the mechanics, I need these people to grow herbs and produce monastic books?

You recruit unemployed villagers as monastics by clicking on the monastery itself. There should be two options to recruit male or female villagers.
