You get 1 knight for every 4 soldiers. So if, for example, you had 4 companies, each with 10 men, and 26 of them had been promoted from militia to soldier, you would then be able to promote 5 of those soldiers to knights, so you would have 5 knights and 21 soldiers. Once 4 more men reach soldier youll be able to promote one more knight, since you would then have 6 knights and 24 soldiers.
If you want you can concentrate them into more powerful units, or you can spread them out evenly and have 2 knights and 8 soldiers in every company.
Remember that knights also need a room in the private quarters, which you also need for attending to the royal companies that visit, so make sure its got enough capacity.
