Right column:
Arrow up means BUY, the number next to it means UNTIL what amount of resources you will buy. So a "10" means you will buy until you have 10.
Arrow down mean sell, the number next to it means FROM what amount on you will sell. So a "10" means you will sell if you have more than 10 and you will stop selling at 10.

Edit:
Don't forget to have a warehouse or a silo which accepts the goods to trade.

It is

Green for buying
Red for selling

Seems pretty intuitive for me.

Especially because it is greyed out if you cant trade at all and yellowish, if you can press it/activate it.
more importand is... you need a warehouse and set the stuff up in thre for what you wanna trade

So true! People just don't get it (because they don't play the tutorial)
I have a warehouse and a granary, both have fish and planks with green arrows, indicating "Accept". I have 2 trade routes unlocked, have red arrows next to fish and planks, with a number in the field to the right that is roughly 1/3 of what my total inventory is. It has been 2 in-game months, a trader has never come, I'm building warehouse lots to hold the 3-400 planks and fish that I want to sell, and my income is tanking. Is there a special building I need to actually trade, or a place I need to designate for the trader to buy/sell?

I have couriers showing up, other quests, time is flowing past but I have no income other than a piddling amount of taxes.

This is strange. From your description, it seems you have set it up properly. Can you give us 2 or 3 images, with the proper small info windows showing, so that maybe it will give us more clues, on what could possibly be the issue.
The game does a really poor job of explaining these mechanics. Especially having to have a warehouse or a granary that first needs to accept what good you want to buy.

Also, having it described as "sell everything above the value" or what ever it says is just needlessly confusing.

Just have it be I wanna sell 10 tools and 20 grain every time jobsworth county's trader comes by. Not sell whatever I've got above a certain value. Make it simple.

Yeah we would need screenshots to help you - everything you wrote seems correct.

What? Naah. The game explains it step by step in the tutorial. Sell everything above is not confusing at all - are you for real? Sell everything above 20 means, that you will sell everything above a stock of 20 - whats complicated about that?! You approach is worse. If you always sell 10 tools the trader comes by, you have a chance that you run OUT OF tools. The other way, you will always have 10 tools in stock because you only sell above it. It is simple, you just dont seem to get it. Sorry.

If it's obvious, please don't hesitate to point out what I missed. I did the tutorial until it said "no more advice", but I just can't seem to make this work.
Is there any chance you have built on an island and need to build a bridge to allow the trader to access your town? You mention couriers can get there so this seems unlikely, but I'm not sure what else could cause this.

That said, your log only shows one week worth of text, and the traders only are supposed to come about once a week (it can be a bit longer as the game goes on, but not too much more than a week) . . . is there any trader visit at all in your log? Even if it never shows in your log, do you see them wandering in your town ever (they look like a big shield icon over their head)?

In addition, once they purchase from you they need time to refresh their funds (this may or may not have changed since early access, I haven't really done much testing). If you have a lot of stuff to sell, they buy from you, then you wait until they can afford to buy from you again.

My log looks like that for 2 months, it would be a ton of screenshots. I did get a quest, a month ago, to build a bridge for a fishing village. I did it, was rewarded, and moved on. I get couriers for random reasons. I had 1 trader quest show up, offering to sell me tools for 200...I had 5, so I didn't accept it. People come and go, but the automatic trade has NEVER happened in my town. Scrolled all the way back to the beginning of my logs. I didn't really notice it until I ran out of money and realized that I didn't actually have an income.
So your problem is actually that there is no trader showing up. Strange. Never encountered this problem or heard of it. You are not on an island? You dont have any new "no go" areas? Because according to your screenshots you are selling fish, planks and polished stone, and you have storage for those goods to get accepted and have more goods than your sell limit, which is correct.
I have the exact same issue. Loads of stock to sell and requesting tools to buy. Restarted a new game also. Exact same issue. Traders never turn up. Couriers do though. Asked on Discord and added screen shots. Everybody said i have it set up correctly

I am also having the same issue and cannot progress through the tutorial. I have a warehouse, tons of planks stockpiled never seen a trader and didn't even know that was thing until reading this thread.
Hummmm, strange. It smells like bug, if you have set up your trades correctly. Try to reach out to the Devs! Discord is the best platform I guess.
