i think you need to use a part of the manor house that projects this, its marked with a little fence on the icon (e.g. a tower should to it)
If you build towers, no matter if it is for manor house, church, fort, or whatever, then look for a small icon like a fence in the right bottom. Then, when you build it, you will see a purple area, which increases in radius if you adjust the height of that tower. That area is passive light fortification.

Thanks for the tip but that's a little beyond where I am right now - kinda complaining that the game didn't do a better job of saving me a bunch of boring waiting by letting me know that the towers offer fortifications.
