Bread is missing from the trade screen so you can't sell nor track it

It is. You probably haven't unlocked the technology yet.

Go look in the progressions screen. In the Common track, far left, you'll see wheat farms (and all that goes with it) down a couple of tiers. Not too far, level 2 or something like that. You need to unlock that Common tier and item for bread to show up. Ditto other commodities.

Ahh, thanks, I had reloaded an older save to check on something and was looking for it there. That's it.
