Monastic Kitchen
I doubled my monastic kitchen in size, yet they are still only able to produce one meal. Is there no way to expand that kitchen so they can prepare more types of meals?

Seems like I have to build multiple kitchens if I wanted to produce more than one type of meal.

Correct, buildings only have one function.
You can build two adjacent kitchens, you only have to build two different buildings, even if they are attached. I did this with my taverns, since the taverner is almost always on free time and almost never refills his stock, so two different buildings equals two taverners or cooks.
Later in game you'll need three monastic meals for the bishop or other monastic dude who comes to inspect your monastery.

As you grow your monastery, build separate refectories as well and have one monastic meal plus two rustic food types in different sequences in the refectories. Otherwise, everyone will always eat the first meal on offer and ignore the rest.

So unless you want to manually switch what the cook prepares, you'll need separate kitchens for each meal. Best also to have a monastic grange to store the kitchen's surplus.

Totally agree.
Just keep in mind thant if you want to manage the number of monks/nuns you must have only one full dorm to be quiet for the 150 needed...
