You can't add another functional keep to a castle (and you can't have two castles with a keep each).
You can patrol and guard with villagers as soon as you unlock village fortifications in the Labour track.
Patrols
You dont necessarily need your castle´s soldiers for patrols because you can get patrols from one of your manor´s building components.
I build small manors around my city with towers (so they stick out). Watchmen and tax collectors. Those watchmen are normally also the ones you use for the patrols. Your castle´s soldiers can help when youre running short on personnell or if there´s holes in your patrol route due to the lack of watchmen.
Military missions
I cant precisely tell you at what point in the game you will be able to have more batallions, but that will come with the progress through the game. I myself have 16 batallions right now (you can extend the batallions to 10 people at some point with certain tents you get from your castle´s building menu.
I think it's because the game lacks tutorials at this stage. Regularly I had villagers suggesting me "mini quests" that worked very well at explaining some of the new features, but it stopped for a while now even though I kept unlocking stuff, so I just don't know where things are, how I get a bigger army, not very well called out on the tech tree... Hopefully it'll be improved in the future :)
Me personally, im happy with the new or modeled featrues. New things to try, new things to learn. And if you remember the horrible hud and menus in the buildings one forgot about... at some point we either got used to the menus or at least knew how the system in the game works.
Same here: Took myself 3 cities now to learn all the new features but am able to plan beforehand for more beautiful cities.
Let's just start a new city indeed, I will this time focus on labour structures first, army only later, in a single location.
Everything for your army needs to be attached to that same building group the keep is in.
In other words with weapons having to be in the armory in the same building group the company is in. Which means each company would require their own armory and such and it gets messy.
Well no, we used to be able to split army in multiple camps, they'd just pick their gear from whichever stockpile they're in. Since it's a one-time thing, distance doesn't matter.
But anyway, now that I know how it's supposed to work, my 2nd game is running much better. I also wished the game called out that increasing density gives 3x more room, I would've focused on that from the very start and perhaps better understood the watchman system
For the gentry , the game begins like in the EA and keep somes rules from it too...
But after built the Castle's Companie, of 5 miliciens , all was different :
If you went a second companie , you must open a sub-building and built a tent of 5 max.
If you want a companie with 10 miliciens , you must change this one with "improvement"a second tent to put at the side of the first one...
no companie works in a building , only tents...
Also 10 miliciens was the max by companie..
Be careful , instead the EA , miliciens will need merchandises too now..
You got always the same message before send a companie : "correct"
which does mean nothing,you don't know if you take a risk or no ...
During a mission ,the companie come back and somes miliciens must be healed and continue their training...that is for that than it took a lot of time...
miliciens cosr 1 po/month and must be promoted to soldiers 5po/month at the 5 grade..
and the companie begin level 2.
You are able to give advanced weapons if you bought Steel at the begining...
