Progression - am I supposed to build a Monastary and Castle?
I have the first 2 things unlocked fully, and I'm wondering if the game is expecting me to build the other two. There just isn't really anything happening, except for occasional trade deals and stuff...

It is a sandbox game, unless you pick an aspiration that has special rules you can do whatever you want really.

I'm just wondering if I'm missing half the game if I don't build out the other trees
That for sure, if your goal is to see everything in a single game then you should build at least a small castle and small monastery in addition to the normal labour path buildings

I plan to play through at least three times, once for each Aspiration. In that case, should I actually choose the Aspiration when I start a new game?

I chose to "let me do what I want", since I didn't really know what I was choosing there, lol.

But I don't mind starting over and choosing an Aspiration. I have learned quite a bit on this first run that I could implement in a second run. (Only 101 people in my city so far)
Yes you have to choose the aspiration from the beginning as it defines the custom rules for your playthrough

As you try to advance some things in the game it will push you into other areas like the Monastery area of the game.

For example I wanted to increase my trade limits and the game requires me to play with the Monastery to store enough of something made in ,the Monastery to be able to increase my trade limits with one of my trade partners.
