The currently available minerals are: stone, iron, marble, quartz, and gold
A deposit is discovereded via a baliff and mandates. When a manor is built, one of the parts is designated as the baliff, a baliff is assigned and mandates chosen, which are random, btw, without any assurance of success.
It's also random from game to game. If you load save file and the iron mine is the one you'll inspect, it will always be there, but if you load new game, the iron mine might be somewhere else. It makes gameplay different...
As of the preview build currently live nodes are rolled when you prospect them and you can load to get a different mineral ;)
If you're not happy with the three choices for bailiff, then simply unassign the manor piece from "Bailiff's Office" back to "none" by right clicking the button that assigns that function. Then, reassign that piece as the bailiff's office and you will have 3 new choices to assign. Repeat until you have a choice you want.
Anyway you can:
1) save your game
2) send your bailif on a mission, and follow him to see where he goes
3) while you don't wish this location, reload the game with your save and try another mission
