Report a translation problem
It kinda suggests you can add the chimney to already existing parts; however, attaching it to already existing parts doesn't work for some reason.
To solve the problem, build a new house-part to your manor and attach the chimney to that.
Easiest way, check if you either need a tax office or a bailiff and build one of those. Add the chimney to the roof and mission completed.

This actually works without dismantling and rebuilding anything. You have to select the main hall explicitly in the appropriate menu after selecting the building. Even if you have just that main hall. Not intuitive at all and obviously confusing judging by the answers here, but it works.
