The church "wick" does not simulate a work week.
After that once on free time they start filling their needs starting from the most depleted one and proceeding in order until they are all filled again, then if they have more free time they sit in their house or benches etc. around town.
Many games have implemented a priest for their churches and it is almost always a purely decorative element in the end of the day. E.g. Banished so long as you have a priest any villager can fill their church need regardless of if the priest is in the building when they visit it.
Which makes sense gameplay-wise, can you imagine the inefficiencies that would be caused if villagers had to wait for the priest to get there before they fill their need? I don't even want to think about the mess that would cause in all other production buildings.

Adding happiness (on top of that provided by the church) is just the simplest solution I could think of.

I would like my villagers to attend church on a game time weekly basis.
