Unknown Hospitium visitors
As long as invited guests are staying at a hospitium, I assume this is announced in the lower left corner of the screen ("Hosting ..."). And when there is no entry about visitors any more, I'd assume they all have left and the hospitiums are empty and could provide room again for newly invited visitors.
However, my 2 hospitiums seem to be occupied by squatting monks - they are nearly fully occupied by monk visitors although they should have left. There's no notification about any visitors. And in the monastery which is exclusively for nons, the hospitium is occupied by male 'squatter' monks. ?

EDIT: I have just watched a group of monks approaching from the mountains, with the typical icon for visitors above their heads, and moving into one of the hospitiums. Without prior invitation or notification.

EDIT 2: Also strange, unknown soldiers with spear and "visitor" icon suddenly appear and reside at the hospitium of the non's monastery without invitation or notification.

Only the dorms are designated for either monks or nuns. The rest of the monastery is for whoever can work or stay there. I'm going to experiment with two separate monastery complexes, but I'm guessing I'll see monks and nuns fill jobs at whichever one has an opening. It seems that there are random groups of people passing through, and they'll use the hospitium for shelter, along with buying from your markets. Hopefully, the tavern will be made to work the same way for visitors. I want to try that, but I don't think it's been implemented, and I'm having a tough time getting off the ground favoring anyone but the clergy.

The problem with random groups of people occupying hospitums: no more space for invited, regular visitors. And because they come without notifications, you never can be sure whether there will be space available for invited, regular visitors. I must admit I don't like the squatters.

Another observation: in my game, the refectory head of the monks monastery walks the long way to the nons monastery, enters the non's refectory there and steals their food which he brings to the monk's refectory.

LOL for the thieving monk. - I also noticed that wandering (and other) monks spend more time at the refectory of my nunnery than at the church. There's something fishy going on there.

As for the original question: I have three hospices and that seems to be enough for both my regular and irregular visitors. I discovered no way to stop irregulars from visiting.
