Sure is realistic, and in one way i like it! But in the other way it's my patience whining about clearing areas taking too long lol

Nope. you lose all the resources when you delete. Unfortunately @Dondeem, gates no longer clear trees. Now builder hut is the best option. least amount of resources and instant build. but LOTS of clicking.
A pure sandbox option should be done close to the release (see trello: https://trello.com/b/i5AX944p/foundation-roadmap )
In the meanwhile you have mods (fire for instance)
I can see that you don't own the game (at least not on Steam) so you are probably not aware exactly how the harvesting mechanics work but the game does allow you to select an area and have its resources harvested so long as you have the warehouse space to keep these resources.
Foundation won't over-harvest resources or leave them on the ground as wood piles like other games do as that just looks ugly with piles of resources all over the place.
However, the OP was looking for a way to remove the trees without chopping them down, i.e. without using the mechanic that all games have which ofc is not possible.
I got the GOG version of the game, and was in love with it when I started my first map, it has a settlers vibe to it that I was missing for years, BUT, after I started my second map, some mechanics, like this one requested by the OP, started to make the game annoying.
It's only a suggestion, the game is still in development, the time to speak is now and help with new ideas and or old ideas that the game is missing.
1. You need storage space available for the resources to be harvested
2. You need a woodcutter's hut (some games like Banished do resource removal via all currently unemployed villagers and not woodcutters but Foundation is more like Settlers where you need woodcutters specifically)
3. You need to paint the area you want the trees removed from with extraction zone
4. Depending on the size of the selected area and the number of woodcutter's huts available as well as their proximity to the target forest it will take a certain amount of time to be cleared
What is different in Foundation is the much more limited available storage space compared to other similar games preventing you from cutting huge forests at once.
The option that doesn't exist is to remove the trees without cutting them and getting the respective wood resources, an option that also doesn't exist in most if not almost all city-building games. (In Foundation this can only happen by builders if you place a building on top of trees)
Not saying it wouldn't be helpful in some cases, especially for farms as you already mentioned, to have a "remove trees without cutting them option" but it would be a deviation from the norm and an immersion breaker at least for some people.
What I would for example recommend instead as a more immersive alternative is to have farmers clear the trees from their fields before planting them.
It would be a very good way to implement it.
