None of them sell cloth.
No cloth to trade for.
I spent the cloth I started with on the market means I have to start over because I have no cloth to build the Stonemason Hut.
No Stonemason Hut means no Church.
No Church means no commoners.
No commoners means no sheep to make cloth.
You should be able to trade for the cloth or Stonemason Hut should have the cloth requirement removed and the problem goes away.
I have never seen a city builder game come to a dead end so early and so easily.
You need the normal stones for the church, not the polished ones. That's why you don't need a stonemason but the stonecutter.
Once you have the church, your people will rise and you will unlock the clothing chain.

I'm pretty sure the churches don't have any components you need polished stone for.
You were right. No polished stone used.
However my church still would not build because I could not get the tools to build it. I tried trading for them and none were ever delivered.
I think I lost too many tools when I canceled a building in progress. Since those resources do not get refunded if they were delivered.
