The question I have is whether I should use a warehouse for finished products and keep it near my those facilities and markets so that resources can be retrieved more easily by the seller and are more readily available to trade (does trading become moot after early game based on how much profit is earned from villagers? Maybe traders should buy in bigger bulk or show up more frequently based on your population), or put my finished products in a warehouse on the opposite side of town? So instead of building a whole 'nother supply chain for clothes on the opposite side of town, one tailor could supply two sides of town with clothes because clothing market #1 can grab resources from the tailor itself, and market #2 can still sell on the other side of town because the transporters are keeping the warehouse near market #2 supplied with clothing as well?
Similarly, I noticed my weaver hut has LOADS of fabric, but my tailor seems to have a low output of actual clothing. Does it make sense, then, to use a warehouse to store fabrics on the other side of town, and then build a second tailor that can use the fabrics from the warehouse and supply a market on side B of town?
In this regard, it might make sense to have the option for a smaller storage bin, as OP suggested. Someone that can go grab fabric from the weaver in part A of town, take it to part B of town, and have tailors and markets working from warehouse.
Edit: Maybe a better example is supplying your inland parts of town with fish. Your markets near the river can supply off of the fishery. Is it then redundant to have a warehouse full of fish also near the water? Does it make more sense for transporters to be taking fish to warehouses in remote parts of town?
As to whether warehouses should be near supply or demand, that's down to the arrangement of your village and what the roads connect. Ideally they're hubs, half way from supply to demand, or at big road junctions.
So if you place a warehouse or granary next to a market you only need to have it stock the final products. Raw resources can be placed in a warehouse/granary near your industry for stockpiling and pulling in from distant locations.
