DOG: You can recognize him by his dog ears, he charges towards you (like charge.core), jump towards (over) him. He charges after around 1 jump (of time-measurement) after he's done his animation of ducking or whatever he does. Height does not make a difference, if you don't jump towards him, he'll hurt you, even if you're in a skyscraper.
NINDŻA: You can recognize him by a slash/line through his face. He can throw his katana, avoid it. He can recall his katana, avoid that too. If you grab his katana and there are no other katana's in the stage, he'll turn into a melee-dude (so just run away from him then). You can most easily avoid his katana by walking around. You cannot deflect his thrown katana (a shame, really).
ADDICT: You can recognize him with a triangle in his face. He has a sort of ricochet.hack, so watch out for the bullets that he fires, the bullets that he fires do NOT bounce towards you. You can hear the ricochet.hack, it sounds like the wall is deflecting the bullets with a katana. If you see him trying to hotswitch with you, throw your gun (don't throw if you have a melee), he's very easy to avoid when he doesn't have a gun.
He always forces you to throw your gun, even if you have prfswitch.hack as HOTSWITCH.core.
If you get beserk.hack, you can just punch the living ♥♥♥♥ out of the bosses and they won't be able to do anything (and neither will the red dudes who are desperately trying to shoot you).
If you're using ENDURANCE.core: good luck.
If you're using HOTSWITCH.core: If DOG tries charging towards you, hotswitch. If NINDŻA throws his katana, hotswitch. If ADDICT tries to hotswitch with you, don't hotswitch (he'll still hotswitch with you, even in your new body).
If you're using RECALL.core: good luck.
If you're using CHARGE.core: You can charge out of the way of NINDŻA's katana, it doesn't aim towards you.
But with Katana or with something throwable (dagger, painting palette, music disc - anything) it is different. If the boss is not the changelling kind. You still can not kill boss, but you can learn to love him.
If you ended up in some appendage (quasi dead-end, some marginal pocket on the map - don't ever try it when they can come at you from different sides! 90 degrees is comfortable zone, 120 becomes hardly tenable, more is your delayed death) and the boss came to you - he becomes your shield. You keep hitting him as often as you can and keep him in "stun lock". During that time you dance behind him and keep him get the flak from other dudes. As those other dudes came close to you might have timing to hit them fast enough to be able to backtrack behind the boss and hit him again. This however requires good timing, carefully select moments when you have chances for this stunt. Good thing is, as more and more dudes come at you - you get more and more opportunities to hit some of those, so timing is gets easier and easier to fit.
Granted, this is a risky approach. But every tactics has risks. If you got KILL=HEAL hack though this one becomes almost bulletproof.
I see no shame here. Dudes also can not deflect your katana when thrown. So it is just laws of that world. Would you make katana deflectable - you would be first handicapped by that :-D
The thing is they can, but only with a katana and if you don't have supthrow.hack.
You see the deflection particles and sideways("spinning") katana, right?
Context.
Height does not make a difference if you don't jump towards him. = Height makes a difference if you jump. (double negatives = positives)
Height does not make a difference if you're just standing on a skyscraper. DOG will attack your legs.
If you jump over the DOG, he will not hurt your legs.
I believe you can with CHARGE.core and suppunch.hack, although I don't know if it's intentional.

I'd say this is similar. To be able to kill bosses, one would need to choose right core, and pick up right hack, i.e. keep to some strategy from the start, limiting other options. Just to get such achievement, which doesn't give much benefits except slightly easier completion of just ONE round (which isn't worth limited options).
I'd say, this shouldn't have been fixed, instead, you could've add another achievement.
