Game is not as big as it could be, but it's not small, and NG+ makes it more enjoyable. You can do a lot of different builds, so everyone should find something interresting for themselves.
Also, if both of you want to play cooperatively through the story with new characters, you will have to play it twice. What I mean is, you will need to play in one person's world, kill the boss, and then the switch will be needed, so both of you can go further in the story. Unforutnatelly that's how it works here.
Bosses and enemies have more hp and more damage. There rare no new weapons and stuff, but the game on NG is pretty easy when you get used to the controls and mechanics.
