Can you play the whole game co-op?
Is it doable? or is it half assed co op where you cant do some things together

There are few cutscenes you need to watch in singleplayer. The whole gameplay can be done cooperatively.

thank you im getting this with a friend because we quite enjoyed the demo, is the game quite big? and can you do different viable builds or is it pretty much streamlined?

Game is not as big as it could be, but it's not small, and NG+ makes it more enjoyable. You can do a lot of different builds, so everyone should find something interresting for themselves.
Also, if both of you want to play cooperatively through the story with new characters, you will have to play it twice. What I mean is, you will need to play in one person's world, kill the boss, and then the switch will be needed, so both of you can go further in the story. Unforutnatelly that's how it works here.

I understand it works exactly the same as dark souls, are there any different weapons from doing NG+ or anything different? or is it exactly the same but bosses just have more HP and damage?

Bosses and enemies have more hp and more damage. There rare no new weapons and stuff, but the game on NG is pretty easy when you get used to the controls and mechanics.
