Each successor boss (like the successor of the ribcage that you restored already) can only have their vestiges watched and restored before you actually fight them as a boss; if you beat them without collecting the vestiges needed to restore them, then that's it and you're permanently locked out of restoring them.
However, any sidequest that isn't restoring the successors can be done whenever after the minimum point in the story needed to unlock them; beat the final boss, and afterwards when you reload your save you'll spawn back at the mistle in front of the final boss, and can go back and do the sidequests for any NPC you've neglected until the end. So just go through each and every map, and check for npcs that you can talk to on the area map, and you'll be golden.
