The "classes" would refer to "blood codes" in this game. Each blood code has its own abilities and different playstyles, you cannot wield heavy weapons with the Prometheus blood code for example. So some of them are more squishy (but faster) or more tanky (yet slower) than others.
Your outfit and armor aren't exactly the same thing, the outfit really is just for the looks, while your top armor comes with different skills depending on the type you choose.
Also, you can change your blood code anytime ! (but you better have the right equipment at hand for it ahah)
the body customization (skinny/not skinny) including boobs for female are combined into one slider.
from PS4 video, dunno if this version will be different ..

Also, when you level up, you don't choose your stats, you just "evolve" your blood codes.
