There are some achievements to learn and master gifts. Also, always good to do so if you want to change build in the future.
Burning Spirit achievement needs you to inherit 50 gifts.

You can also use items and haze to master them, you find quite a lot in the game and they're farmable.
It's all about customization. The name of the game is "Do whatever the hell you want provided you put in the effort". I've mastered well over 100 gifts and I'm currently an Elemental Duelist wielding a fire sword and an ice sword, my mobility is "quick" so I have more iframes for dodging and my dodge is a glide, and I'm using a claw veil that boosts light gifts through the roof and a passive that boosts ALL of my damage based on mobility (hence the quick). Am I squishy? Yes. Do I truck things? Also yes. Is it gimmicky? It can be. The swords I use have built in elemental attacks on the heavy swings (both regular and charged) and each serves a purpose.
Like I said. Customization is the aim of the game. You can be literally ANY kind of badass you want. I love this compared to other titles in the Souls-Like genre. So much more room to experiment.
I never focus on achievements but when it comes to in game collections like items, lore and abilities I want it all.
