Uurnlimited adds a neural network to the music engine that causes the music to sound even quirkier. It also has a new playable character (the differences between characters are purely cosmetic). It fixes an infinite height exploit. And the Switch version has such long loading times on startup that it adds a minigame you can play during it to get a bit of money. You don't lose out on that minigame on PC either because both versions have a secret location where you can play it as well.
But the main differences lie in the additions to the mechanics and level design. Uurnlimited adds various new gameplay elements and some new locations, including a new ending. I have mixed feelings about this. The new gameplay elements are interesting, but most of them aren't really taken to their full potential because the new locations have a notable shift in design philosophy, with them being more about action than puzzles, which doesn't play to the game's strengths. Regardless, this new content doesn't really make the old stuff worse. I just don't think it makes it much better.
I do dislike the fact that Uurnlimited lets you cheaply buy detectors, though. Making them so easy to obtain hurts the balancing, so I'd advise against making use of that.
It's also kind of unfortunate that Uurnlimited inexplicably removes a bunch of unused test rooms that were left in the original. You had to access them in debug mode, but they had some fun challenges.
TL:DR: Uurnlimited mostly just has more content than the original, though said content doesn't really do much to improve it. Regardless, it's a slightly better version of the game. There's not much of a reason to play the original unless you want to see those removed test rooms.
