You can make flour with it and then bread.

You need to make sure you unlock the correct recipes which will let you use them for multiple things.

Soy extract can be used to make "Soy cereal with mushrooms" a "Simple pastry" or "Soy flour." (might be more recipes I missed)

Based off of what Kezarbash said I'm assuming all "flours" are considered just "flour" in the end. You can make flour, soy flour, or potato flour but they're all the same thing in the end.
