What difficulty should I play on?

Just finished the metro series on ranger hardcore mode for what its worth, so I do like a challenge but I'm also not looking for a doom on nightmare levels of hard

Doesn't even compare, Metro I already thought gave you decent loot, this one is like playing Bioshock on easy or medium.

Sure, enemies slap hard, but after a while you have too much healing items. Maybe it makes upgrading weapons slightly slower, but I'm not feeling a lot of challenge.

I'm playing on hard and is not too hard...

Playing on the hardest difficulty and it is not overly punishing at all.

You have some powerful abilities that allow you to control battles without needing to rely on pure twitch shooting. So if you want any sort of challenge, I'd go with hardest.
