Do countermeasures actually do anything?
I have 80 hours in this game and own every aircraft. I've beaten the campaigns, done PVP, a ton of PVE, even made some of my own missions to play with friends. Other than using flares on the AH94 against IR missiles, I genuinely can't tell if the countermeasures actually do anything or not, especially to radar guided missiles.

They sure do but there are a lot of factors to be mindful of to use them effectively. Look up how to notch and beam, Chaff are designed to be used during specific maneuvers/situations to maximize your chance to confuse incoming missiles.

If you're using flares make sure you drop your throttle to zero, then deploy flares, from what I understand it takes ~4 seconds for the FA-26's engines to go from hot to idle temp when you cut the throttle. And make sure you're not dropping a long stream of flares, missiles will fly right up that stream of flares to the hottest thing, your engines. Instead deploy rapid tight clusters of flares, a larger collection of flares in once place looks like a hotter target than any single flare could ever hope to be.

It takes practice, but missiles can be evaded quite well using the countermeasure in Vtol Vr

Maybe I just suck at notching but the only thing that's ever worked well for me with radar guided missiles is g-pulls with the limiter off (usually ripping off all my missiles) or hiding between mountains. Whenever I try to actually notch, it either doesn't do anything at all or the missile almost instantly re-acquires me.

Notching only works from long or medium distance I think. So when missile is pitbull on you, don't bother trying to notch.

I kind of feel the same, I have plenty of hours on this game. I also know the idea behind how notching and all that works from DCS. But chaff seems like it is very ineffective generally even when notching, like it probably does something but it almost feels like it is broken. Usually I just end up terrain masking, jamming or simply dodge missiles if possible.

For chaff in VTOL VR, look at the second video posted above, it helps a lot.
