do your hands get tired being in the air all the time controlling a "virtual" stick?
"If you have a VR set with tracked controllers, then you have a virtual cockpit where you can reach out and interact with the stick and throttle, flip switches, press buttons, and even pull the eject handle if things go wrong."
I mean, by the sounds of things, it sounds almost like you're getting to go through a much more realistic flying simulation than would be possible with a flight stick.
This is exactly what I do. I just use a chair with arm rests and I turn my chair a tad to the left to allow better throttle control while also maintaining a reasonably comfortable stick position.

No. As that's why you have arm rests.
I just hope there would be little more range in the virtual controls movement possibilities so it would be easier to get proper position.
You don't need to use a flight stick. Just play on a chair with arm rests. Or change the joystick position to your crotch area.
